Northern Norwegian hospitality and a great taste experience
At Bistro Bassit, we have put emphasis on an atmosphere with beautiful and colourful materials, while keeping our northern Norwegian soul and hospitality. Among other things, we have open kitchens in the restaurant to promote the interaction between our chefs and guests.
The name "Bassit" comes from the Sámi language and can be translated into barbecuing food over an open fire/charcoal. That’s exactly what we want to offer our guests, so here you’ll find both a Spanish Josper grill and a Japanese Robata grill. With these grills, we will be able to offer you, as a guest, a unique range on the menu, including fully grilled cuts of meat and fish from Lofoten. The meal will also be served standing by the grill - for an even better dining experience.
Ingredients from the Nordic cuisine
The food served is inspired by the ingredients found in the Nordic cuisine - with a strong focus on both local and locally sourced produce. The main focus is on delivering world-class Norwegian products, and as much as possible using organic and locally sourced ingredients. We also look beyond Norway’s borders so we can always offer our guests the very best of both food and drink.
Our menu is seasonal so that the ingredients used have their ultimate flavour. This makes the tasting experience extraordinary and unique every time you visit our restaurant. The menu consists of several small and medium-sized dishes, so that you as a guest can put together exactly the menu you want. For an even better dining experience, we encourage our guests to share different dishes to create the perfect combination of colours, flavours and harmony.
The hotel bar
The bar at Thon Hotel Svolvær is located on the first floor in connection with the restaurant and with access to outdoor seating on the quayside. We offer a wide selection of cold and hot drinks here. Welcome in for a tasty tipple in the glass.
Greenhouse on the rooftop
We want our guests to have a dining experience with a focus on the best quality ingredients. It is especially exciting to be able to speak about our kitchen garden, where the plants grow under the magical midnight sun in the summer and in the autumn and winter season, under the Northern Lights. In addition, we have set ourselves a goal that within two years we must be able to offer a minimum of 50% of our vegetables, salads and herbs from our own garden. The garden should be as organic as possible, and we are considering a hydroponic solution to be the most efficient. We will use little or no energy, and fertiliser and compost will come from our own food waste. Heating of the garden will come either from natural solar energy or residual heat from the hotel. In addition, both of our hotels in Lofoten use their own seawater pumps for heating and showers. As much as 65% of all our energy consumption actually comes from the sea in Lofoten.
Our own bakery
Our goal with our own bakery is to offer you, our guest, real craftsmanship inspired by Italian, French, German, Danish and Norwegian baking traditions. Baking and the craft is something we really appreciate, which is why we want to bring this back and build new, proud traditions. Based on this and where possible, we only want to use organic and ancient grains in our flour blends. This is to avoid artificial additives and the like. Our philosophy is that only the best from all over Europe is good enough for our guests. On beautiful summer days, you can also stop by to enjoy home-made ice cream, or buy something tasty to take with you on a trip.
